Winter is one of my favourite times of the years to stay indoors and bake non-stop. Some of my favourite things to bake are mug cakes, scones, pikelets and cookies. Below are the recipes for my winter favourite bakes
Mug Cake
What you’ll need:
3tbs Self-Raising flour
3tbs Sugar
2tbs coco powder
3tbs vegetable oil
3tbs milk
Splash of vanilla essence (optional)
3tbs chocolate chips (optional)
Steps:
1. Incorporate all dry ingredients together in the mug
2. Add all wet ingredients on top of the dry
3. Mix together until everything is combined
4. If using choc chips, mix them in
5. Place in the microwave on high for 2 minutes, making sure to keep an eye on it
6. Enjoy eating!
Lemonade Scones
What you’ll need:
3 cups Self-Raising flour
1 cup Lemonade
1cup Cream
Steps:
1. Pre-heat oven at 180O or 160O fan forced
2. Mix all ingredients together making sure they are well combined
3. Roll out onto table using a bit of flour underneath to make sure they don’t stick
4. Cut out using a cuter or cup/mug and place onto tray ready to go into over
5. Place into oven and bake for 15-20 minutes
6. Take out of oven, wait for them to cool and then serve with jam and cream
Pikelets
What you’ll need:
175 grams Self-Raising flour
45 grams Caster sugar
½ tsp Baking Soda
1 egg
200ml Milk
Steps:
1. Put all dry ingredients together
2. Beat egg into milk
3. Pour egg/milk mixture onto dry ingredients
4. Mix until everything is combined and when lifting the whisk small ribbons occur
5. Heat a pan with butter/ olive oil and place small amounts of mixture onto pan when hot
6. Flip when top has turned a tinge of yellow and has bubbles
7. Enjoy eating with any topping
Cookies
What you’ll need:
250 g plain flour
Pinch of salt
75 grams brown sugar
75 grams caster sugar
150 grams unsalted butter softened
1 teaspoon vanilla essence
1 egg
¼ cup dark choc chips (optional)
Steps:
1. Pre-heat oven at 180O or 160O fan forced
2. Mix all ingredients but the egg or flour together making sure they are well combined
3. Add the egg into the mixture and then the flour afterwards
4. If using choc chips add them in making sure they are evenly distributed
5. take small amounts of dough and place them evenly on a tray lined with baking paper
6. Place them in the oven cooking them for 15-20 minutes and when taken out leave them to cool
7. Enjoy eating them, maybe even with a glass of milk
